In the lecture, the speaker casts doubt on several points made in the reading about the first wheat product. The lecturer argues that beer was the first wheat product, while the reading states that bread was the earliest grain-based food.
 
First of all, the passage says that early people ground wheat into paste because it was too hard to eat. However, the lecturer contends that wheat could not be ground since sprouted wheat not only is much easier to eat without human efforts but also tastes better.
 
In addition, the reading asserts that wheat paste made people think to bake is as bread could be kept longer than seeds even after harvest. By contrast, according to the lecture, fermenting happens very fast, which leads to foam, so early people probably tasted as the first beer.
 
Finally, the reading suggest that fermenting could have encouraged people to bake wheat paste since it gets softer and easier to eat when cooked. However, the speaker claims that early people would not think to bake the wheat because it easily ferments, and they might not be used to cooking.
To sum up, regarding the claim in the reading that the earliest grain food was bread,m the speaker asserts that beer must be the first grain food by contradiction several main points of the reading.
